Summer Dinners

3178135thl I love easy, fast, fresh, delicious summer dinners.  Nothing signals summer more than beautiful ears of corn!  AND the last few years I discovered a new way to prepare corn that thrills my entire family...well..."thrills" is a pretty strong description of what that corn does...but you get the idea.

So here's what I do:

-Cut the kernels off the ears

-Saute the corn with a bit of butter and some snipped chives

-Add salt and pepper and quickly saute for a few minutes

THAT'S IT...easy and no corn silk between your teeth!  I made this the other night with sliced tomatoes quickly broiled with pesto and a slice of cheddar cheese on top...Some veggie humus and chips and that was dinner!

What's For Dinner?

30715525Does this look like your family gathered around the table for  an ordinary weekday meal?


NOT...

If you are like most families today this is not your serene dinner hour.  I saw a study recently that noted how tough it is just to come up with the evening's menu.  Most moms, the research showed, don't know what they are having for dinner at 4 pm.  Whew...I'm not the only one.  Do you find yourself looking around about 4:00 wondering...hmmmmm...what's in the fridge...what could I throw together that would make this family happy...that's healthy...and that they would all eat!

I've written in the past about my love affair with the crock pot.  But, there comes a time when everyone is a little sick of that "one dish" meal. 

My friend Liz Weiss is a dietitian, mother of 2 hungry boys, and a cookbook author.  She just launched a blog that will, hopefully, put an end to my mealtime madness.

Tonight at our house it's veggie stir fry with tofu.  I'm using precut tofu and precut veggies.  So, it should take all of 5 minutes.  My kind of weeknight meal.  Healthy, fast, and someone has done the work for me.
