The peaches this time of year are luscious! Take a 1/2 hour and make this amazing Peach Tart I concocted last night. I morphed a few other recipes and came up with the one below. It's beyond easy and your kids can help by getting their hands in the dough. My family LOVED this simple, sweet treat. Best of all, no tart pan necessary.
Amazing Peach Tart
INGREDIENTS:
- 1 cup flour
- 1/4 cup sugar
- 16 Tablespoons chilled butter + 2 Tablespoons butter, at room temperature
- 1/2 cup finely ground almonds
- 1/2 teaspoon vanilla
- grated rind of 1 lemon
- 1-1/2 lbs. ripe peaches (4 peaches)
- 3 Tablespoons brown sugar
- salt
PREPARATION:
- Place the flour, sugar and a pinch of salt in a food processor. Cut the cold butter into 16 tablespoon-sized pieces and pulse into the flour, about 30 seconds.
- Add the ground almonds and lemon rind
- Add ¼ cup of ice water and vanilla
Preheat oven to 375°F.
5. Roll out the pastry between 2 pieces of waxed paper into a 13-inch circle.
Peel off the top piece of waxed paper and place the dough-side down on cookie
sheet.
6. Using your thumb and forefinger, pinch up the edges of the dough to form a
free standing 1/4-inch lip.
7. Bake for 20 minutes, or until light brown.
8. Peel the peaches and slice them as thinly as possible.
9. In a small bowl, combine the 2 tablespoons of softened butter and the brown
sugar until it forms a paste. Spread this on the pre-baked shell.
10. Arrange the peaches in a circular pattern on on top of the butter/sugar
paste and bake for another 10-15 minutes.
I put a strawberry in the middle to look pretty! YUM
